Banana bread/muffins

It doesn’t get any easier than this.  Whether you have the busiest schedule or hardly have anything in your kitchen, there is no excuse for not baking this banana bread or muffins.  It’s so quick and easy it’s a joke.

What you’ll need – ingredients:

2-3 bananas, should make a cup’s worth

1 orange (1 tsp grated peel shavings + 1/4 cup orange juice)

2 eggs

2 tsp baking powder

1/2 tsp cinnamon

2 1/2 cups flower

1/4 cup poppy seed

1/2 tsp salt

1 cup sugar or 1/2 cup honey, whichever you prefer

1/2 cup butter or if you don’t have, you can use 1/4 oil + 1/4 milk

You’re next biggest decision: bread pan or muffin pan?

Now, let’s do this…

Start by turning the oven to 180’c.  Next, start preparing the orange and banana.  Grate the orange, juice it and mash the bananas (you can also use your blender for this).

In a separate bowl, mix the sugar and butter (or your preferred substitutes) until well combined.  Beat in the eggs and grated orange peel.

In another separate bowl add the flour, baking powder, salt and cinnamon together.

Fold in bananas, orange juice and dry ingredients into the wet ingredients until well combined.

Stir in poppy seed.

Pour into a sprayed/greased 12 piece muffin pan (standard size) or bread pan.

And into the oven for around 50 mins.  I would say check on it from 40 mins.  Enjoy!
