Time to break away from the norm again.. Every now and then I treat myself to some of the most amazing inspirational photos and recipe ideas on Pinterest and try ’em out when I get the chance. I like to experiment so I always tend to alter the recipe (even when it comes to baking..when will I learn?)
This one, however, is quite simple and straight forward: Aubergine with pizza toppings. It’s completely foolproof and takes less than 20min prep.
You can get quite a serving out of one aubergine, at least 4 people, or 2 very hungry buggers. So, depending on the occasion, I would say buy 1 per 2 peeps just to be safe.
- Tomato pizza base sauce/salsa (canned or your own)
- Cheese (I like to use Feta on everything but I suppose Mozzarella or Parmesan would be more ‘pizza like’)
- Olive oil (I have my own olive oil mixture with balsamic vinegar, chilies and various spices)
- Add pepper, chili and oregano to your liking
- Don’t add salt, there’s enough flavour already!
Optional: Olives, peppers, onions, basil leaves, garlic, sun-dried tomatoes (or pepperdews for those of us who know this wonderful creation) mushrooms, etc. Treat it like a pizza, have fun! But think with your tongue, if you know what I mean.
Cut aubergine in slices, between 1 to 2 cm thick, drizzle some olive oil and grill over medium heat. You can do this on barbecue day, in your oven or in a pan.
While you wait to turn or change the slices, prepare your toppings. Chop, fry, grate, etc. The aubergine should have colour and still be firm. Check around 2 mins. depending on the heat. Once the grilling is done, start with tomato sauce, cheese and then the rest of your toppings. Keep fresh leaves for afterwards.
Now, into the oven for more or less 10 mins at 180’c. Check the cheese as the primary sign of whether it’s ready. Then take out and add garnish, spice, basil leaves, etc. of your choice.
